Meal Idea Monday-Mediterranean Farro
If you’re new to the group, before baby #3 arrived, I was sharing meal ideas on Mondays. I’ll be getting back to these as I remember
This week’s idea is Mediterranean Farro! I love this dish & it’s always a hit. It can be a side or main dish. My kids are hit or miss with it as with everything most days I don’t measure things out but will do my best to give measurements but feel free to always eye ball things
- 2 cups farro
- 1 cucumber chopped
- 1 red pepper chopped (or a handful of the mini red, yellow + orange peppers chopped which I used here)
- 1/2 red onion chopped
- 1/2-1 cup feta (I didn’t measure this just dumped in an amount to my liking & I like cheese)
- 1/2 cup chopped kalamata olives (I bought a jar of pre-sliced ones at the store & used about 1/4 or 1/3 of the jar)
- Greek dressing
Optional add ins not shown:
- roasted or regular chick peas
- chicken or meat of choice
- dollop of hummus or scoop of TZATZIKI
Steps:
1) Make farro according to package + let cool
2) Chop all veggies & add into casserole dish
3) Add feta into dish + mix with veggies
4) Add Greek dressing to your liking (maybe 1/3-1/2 bottle?) to the farro only + mix.
5) Add farro to the dish + combine!
6) Enjoy!
