Meal Idea Mondays - Veggie Pasta with Meatballs

I am a big meatball advocate because you can try to hide veggies in there for the kids. This was my plate, but I served the kids everything separately. Forgot to take a photo of that.

Adult dinner: veggie pasta with meatballs (with broccoli, zucchini, carrots & spinach .. & cheese), with red sauce & ricotta cheese. Yum!

Kid version: veggie pasta with garlic & olive oil (they’re super into that these days), meatballs, fruit.

Meatballs (I don’t measure out these days but about this amount:)

- 1 lb organic ground beef

- 1 cup breadcrumbs

- 1 egg

- season to your liking (I like to use McCormick Grill Mates Steak Seasoning)

- 1/2 cup milk

- shredded carrots (with cheese grater)

- grated broccoli crowns (I grate w a cheese grater & just do the top so it’s tiny tiny pieces)

- this round I got already diced zucchini from the store but you could grate it or shred it like above

- shredded mozzarella cheese

For the veggies I just added in til it looked like a good amount

Combine it all. Roll into balls. Bake in the oven at 400* for 20 min.

Serve with pasta & fruit or ricotta!
