Meal Idea Mondays-Banana Oatmeal Chocolate Chip Muffins
We love love love to bake, if you don't know yet. I'm a big mini muffin maker The girls love helping me, and it gives us an afternoon activity. If Ashley is not napping, I usually give her her own bowl to mix up to keep her entertained
We made some banana oatmeal chocolate chip muffins today & we can’t stop eating them! Adapted from Happy Healthy Mama with some additions on my end:
2 ripe bananas
1 cup milk (we use So Delicious Dairy Free coconut milk)
1 egg
1 teaspoon pure vanilla extract
2 cups old fashioned rolled oats
1/2 teaspoon salt
1 teaspoon baking powder
1/3 cup chocolate chips (I use mini chocolate chips)
2 sprinkles of cinnamon
1 tsp of coconut sugar
1 tbsp ground flax
1 tbsp chia
Sometimes we’ll add a scoop of vanilla protein powder too
- Preheat the oven to 375 degrees.
- Lightly grease muffin cups or line with silicone baking cups.
- In a medium bowl, mash the bananas well.
- Add the milk, egg, and vanilla and stir to combine.
- Add the remaining ingredients except choc chips and stir to combine.
- Stir in the choc chips.
- Pour the mixture into the muffin cups and bake in the preheated oven for 20 minutes. (we used mini muffin cups but any size will do)
