Meal Idea Monday - Mediterranean Farro

Mediterranean Farro

A quick and easy dinner, or side dish, you can serve this cold or with warm grains! (I prefer cold) You'll need:

  • 1 red pepper

  • 1 red onion

  • 1 cucumber

  • spinach (I like to chop this or just rip into small pieces)

  • olives (optional)

  • 1 can of chickpeas, rinsed

  • Farro or grain of choice!

  • Greek dressing (I'm not a measurer, but a few squeezes or to your liking!)

  • feta cheese crumbles

Make Farro according to directions.

Chop all the veggies, and throw in a bowl. Add in chickpeas. Mix with dressing. Add in farro and cheese. Mix around, chill for a little bit. ENJOY!
