Meal Idea Monday - Mediterranean Farro
Mediterranean Farro
A quick and easy dinner, or side dish, you can serve this cold or with warm grains! (I prefer cold) You'll need:
1 red pepper
1 red onion
1 cucumber
spinach (I like to chop this or just rip into small pieces)
olives (optional)
1 can of chickpeas, rinsed
Farro or grain of choice!
Greek dressing (I'm not a measurer, but a few squeezes or to your liking!)
feta cheese crumbles
Make Farro according to directions.
Chop all the veggies, and throw in a bowl. Add in chickpeas. Mix with dressing. Add in farro and cheese. Mix around, chill for a little bit. ENJOY!
