Meal Idea Mondays - Enchilada Lasagna

Let’s talk meal time. I dread it as the day goes on... my oldest never wants anything I make, and I am over thinking of / looking up exciting recipes.

What dinners have been a HIT for your families this week?

We’ve been doing a lot of “grain bowls” and tonight I made enchilada lasagna adapted from the How Sweet Eats recipe. I used to make this all the time when I lived in DC & forgot all about it. I tweaked it a bit, and was hoping that Emily would eat it since she helped me make it.... but no.
