Meal Idea Mondays - Tik Tok Feta Pasta with Broccoli & Meatballs

Tonight we did our version of the tik tok feta pasta with broccoli & meatballs

Before I dive in, I will say Greg + I honeymooned in Greece, and I think almost every dinner out I had baked feta as an app + we carried that over to holidays + special gatherings here. It’s SO good - you don’t even need to add pasta and all these other things. Just pop a block of feta in a dish, sprinkle with seasoning and olive oil, bake at 400 for 20-25 min, and enjoy with bread, pita, veggies etc. It’s AH-Mazing!

Anyway my version of the tik tok pasta:

- 1 1/2 blocks of feta

- olive oil

- seasoning (I used camp mix original, have also used greek seasoning)

- minced garlic

- broccoli

- chopped onions

- 1 box veggie pasta

- meatballs (separate recipe below)

1. Chop up broccoli how ever you like it, pop into pan with garlic & onion. Sprinkle with seasoning & olive oil, mix all around. Create space in middle of pan, and add block(s) of feta. Sprinkle more olive oil & seasoning on feta.

2. Pop into the oven at 400 for 20-25 min.

3. Meanwhile cook pasta (I used veggie spaghetti BC it’s what I had but I think any type of pasta would work) & drain.

4. Once feta/veggies are done, bring out, mix around, dump in pasta, mix around more & serve!

So.good!

As mentioned above, we served with veggie meatballs. I don’t measure much out but here’s my go to:

- 1 lb organic ground beef

- 1 egg

- breadcrumbs (maybe like 1/2-1 cup)

- McCormick steak seasoning

- cheese-grated broccoli & carrots

- 1/4ish cup of milk

Mix all ingredients in a bowl. Form into balls. Bake at 400 for 20 min.

Girls ate regular pasta with olive oil & garlic, ashley ate meatballs (em did not), carrots + apple slices.
