Meal Idea Mondays - Quinoa Bowl with Sausage, Peppers & Feta

This week a SUPER simple healthy meal & you can honestly edit to your liking.

Quinoa bowl with sausage, peppers & feta! I served this warm, but can also be served cold or room temp. Here’s my simple, on-the-go recipe but share in the comments if/how you switch it up!

I love these Seeds of Change microwavable (also stove-top-able) quinoa/rice packs. They make it easy to have grains ready to go. Also the packaging is BPA free

These organic mini peppers are so quick to chop & slice and throw on the stovetop with olive oil & seasoning. Ashley even helped me prep these!

I’m a meat eater but you can definitely make this meatless with your protein of choice. Our family loves the market basket Italian sausage. I admit, it’s not the healthiest, but it’s super tasty & the girls eat it. This takes the longest to prepare, so other easier meat are available. Other options include chicken or turkey sausage. I like Whole Foods or natures promise, along with a few others! Or sometimes I’ll just ground beef!

I’m also a big cheese fan so this one has feta sprinkled on top.

Other add ins could be: spinach on top, greek vinaigrette for a lil extra flavor, more veggies, whatever your heart desires!
